Why ?

I'm watching the Trayvon Martin story (part 1) on the Paramount Network.  I'm wondering why when a black kid gets killed by a white guy ,in self defense, is a civil rights case. Al , Jessie and the media made lots of noise about this case.  So why isn't it a civil rights case when a white guy gets killed by a black person.  Where are All, Jessie and the media ?

Move over Cracker Barrel

I've always loved the hash brown casserole at Cracker Barrel. After many experiments this is what I've come up with.

INGREDIENTS:
30 0z. bag frozen Ore-Ida brand hashbrown potatoes, thawed
1 can condensed creamy cheddar soup
16 oz. sour cream - I used fat free
1/4 lb. deli sliced Virginia ham, chopped
1 large green bell pepper, seeded and chopped
2 cups shredded sharp cheddar cheese
1 tsp. onion powder
1 tsp. kosher salt
1/4 tsp. black pepper

DIRECTIONS:
Preheat oven to 375 degrees F.
Grease a 12"x 9" casserole dish.
Mix all the above ingredients together in the casserole dish and 
spread to cover the bottom of the  dish. 
Bake on center rack uncovered for 45-50 minutes or until nicely browned.

Pork Tenderloin and pineapple salsa

Grilled Pork Tenderloins with Grilled Pineapple Salsa


2 (1-pound) pork tenderloins, trimmed of fat and silver skin 
6 tablespoons olive oil 
1 tablespoon ground chipotle chili powder 
2 teaspoons salt, plus a pinch 
1 teaspoon freshly ground black pepper 
1 teaspoon dried Mexican oregano, crumbled 
1 1/2 tablespoons minced garlic 
3 tablespoons fresh lime juice 
1 pineapple, peeled and cut crosswise into 1/2-inch slices 
1/4 cup finely chopped red onion 
2 jalapeno peppers, seeded and minced 
2 tablespoons minced red bell pepper 
1 tablespoon finely chopped fresh cilantro leaves 
Fresh cilantro sprigs, for garnishing 
Cilantro Oil, for drizzling, recipe follows 

Preheat a grill to high. 
Rub the pork tenderloins all over with 3 tablespoons of the olive oil, then sprinkle evenly with the chipotle chili powder, 2 teaspoons of the salt, the pepper, and the oregano. Rub the tenderloins well with the garlic and drizzle the lime juice over all. Allow the tenderloins to sit, refrigerated, for 45 minutes before cooking. 

Brush the pineapple slices lightly with 1 tablespoon of the olive oil, then place the pineapple slices on the grill and cook, turning occasionally, until softened slightly and nicely marked by the grill, 2 to 3 minutes per side. Remove from the grill and allow to cool to room temperature. Dice the pineapple slices (discard the tough core portions) and place in a medium non-reactive bowl. Add the red onion, remaining 2 tablespoons of lime juice, remaining 2 tablespoons of olive oil, remaining pinch of salt, jalapeno peppers, red bell pepper, and chopped cilantro and stir to combine. Set aside while you grill the pork. 

Place the tenderloins on the hottest part of the grill and cook, turning occasionally, until well browned on all sides, about 10 minutes. Reduce the grill temperature to low and continue to cook, turning occasionally, until a thermometer inserted into the center registers 145 degrees F. Remove the tenderloins from the grill and allow to sit, loosely covered, for 5 to 10 minutes before serving. 

Slice the tenderloins on the diagonal and serve with the grilled pineapple salsa and fresh cilantro sprigs.

Make good summer ribs in a crock pot

Slow Cooker Peach Barbecue Country-Style Ribs

These sweet, saucy, and oh-so-simple slow cooker ribs are easy enough to make on a weeknight.

Slow Cooker Peach Barbecue Country-Style Ribs

 

Ingredients

1 tablespoon unsalted butter
2 large fresh peaches, pitted and sliced
½ cup firmly packed light brown sugar, divided
2 tablespoons fresh orange juice
1 teaspoon vanilla extract
¾ cup ketchup
1 teaspoon paprika
½ teaspoon ground red pepper
2 teaspoons kosher salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
3 pounds country-style pork ribs
Garnish: chopped green onion, fresh peaches

Instructions

In a small saucepan, melt butter over medium-high heat. Add half of peach slices and ¼ cup brown sugar; cook, stirring occasionally, until peaches begin to soften, about 4 minutes. Stir in orange juice and vanilla; cook, stirring occasionally, until peaches are softened. Using the back of a spoon, mash peaches. Remove from heat; stir in ketchup, paprika, red pepper, and remaining ¼ cup brown sugar until sugar is dissolved.In a small bowl, stir together salt, black pepper, garlic powder, and onion powder.Pat ribs dry. Sprinkle both sides of ribs with salt mixture. Place ribs in an even layer in a 6-quart slow cooker. Pour peach barbecue sauce over ribs. Place remaining peach slices over ribs. Cover and cook on high for 4 hours. Remove from slow cooker; let stand for 10 minutes. Serve with cooking liquid. Garnish with green onion and peaches, if desired.

KITCHEN TIP

If you prefer a smoother barbecue sauce, pulse it in a blender until desired consistency is reached.
You can pop them on the grill for just a couple of minutes per side before serving.  This will caramelize some of the sweetness.     The Capt'n

Getting old sucks

It's true, getting old does suck. It seems like the older I get the less tolerance I have for bullshit. And at this stage in my life that means I have less tolerance for the Democratic party and all the garbage that they are pulling. And you better believe I'm not the only person. We will remember at the polls in November and in 2020.If you're a regular reader of this blog, you know that I said I've kind of had it with politics. I even threatened to just turn this into a food blog. I'm almost there, I think the day has come.

Malloy on a roll again

I guess good old Dan Malloy thinks that the Democrats may win the governor's seat again in November. Today he placed two new commissioners. One of them was ex Hartford mayor Pedro Segaura. You may remember that he and his buddy Luke Bronin got together and muscled Sagaura out of the mayor's job in Hartford so his boy Bronin could take over.  Then the genius decided to  spend 10 million dollars on a study to see if we should have electronic tolls in Connecticut. I guess he'll expect a different result than the last two studies they did find out if tolls would be a good thing.. This guy is a total moron. Can't wait to see him go in November.

Remember the almost bankrupt Hartford

The city of Hartford, in all its infinite wisdom, has decided to find a developer  and spend 200 million dollars to develop the area around yardgoats Dunkin Donuts Park. Mayor bronin actually had the nerve to go on TV and say that it was a gateway to Hartford's North End and Albany Avenue. Just what everybody needs a gateway to go to where you can buy your drugs or get shot in one of the biggest ghettos in the state.

Go directly to jail

In Miramar Florida today a bunch of dumbshits wearing orange T-shirts that say "Abolish ICE" decided it would be a good idea to block an intersection and demonstrate in front of an ICE facility. The Miami-Dade Sheriff's Department gave them a new home to go to today, they were promptly arrested and taken to jail.

If you listen to the ad he says that mom-and-pop companies have to collect state sales tax it's not fair that big online companies don't.

You just can't watch the news

Whenever you watch the news in Connecticut it makes you want to vomit. They're having major storms today , trees down, possible tornadoes ,all kinds of good stuff. But where are Senators Murphy and Blumenthal and Governor Malloy ? They're on their soapbox complaining about what Donald Trump said, and what the little kids being reunited with their parents are feeling, destroyed for life because of what the Republicans did to them. Then you turn around and they show you how the state of Connecticut along with New York, New Jersey and Maryland, all very high taxed states, also very Democratic states, all suing the federal government because of the new tax relief code. Because there's a cap on state income tax.  Isn't that just the Democratic way , we want more of your money and we'll sue for it. Even if it means suing our own government to make sure that our citizens pay us more. They're just sleazy. And let's not forget the Chuck and Nancy show still screaming about what Donald Trump should and should not have said. it really does make you nauseous just to listen to these people.

Big decision to make

I've had it. I don't know if I can take this crap much longer. Today I'm listening to Connecticut's Governor Malloy and a bunch of ACLU libs talking about the two kids in Connecticut that were reunited with their parents because another liberal judge said they had to be. They talk about the two kids being diagnosed by Yale University to be suffering from PTSD. Really? Are you kidding me. they talk about the kids in their horrible treatment in a juvenile detention center which is really the daycare center at the sub base in Groton. This is just another Ploy on the side of the Democrats. I just don't know what to say. Molloy turns around and says maybe they should send more kids to Connecticut since we know how to treat them and get them reunited with their parents. What an asshole. So now comes my dilemma. since I can't take this crap anymore maybe I should just become a food blogger and forget all this political stuff. It sounds like it would be more fun and less stressful on my heart.

The Windy City

It's only July 15th and there have already been 261 homicides in the city of Chicago. Most of these have been young black men in some of the worst neighborhoods of Chicago. You don't hear any protests, you don't see anybody carrying signs and you don't have any riots for most of them. So why is it when a police officer shoots one of these people and kills them, black lives matter organizes and comes out  starting riots. They're throwing rocks and bottles filled with urine  at the police officers. The chief of police in Chicago  immediately released the body cam video. It shows without a doubt ,100% ,this individual fighting off the police and running and reaching for the gun he had in his waist in a holster. It was very obvious because his shirt was lifted up. You can't beat the video. It tells the story. This guy was shot, and killed, and deserve to die.

I don't know where to start

Today President Trump met with President Putin from Russia. Apparently this is a firestorm amongst Democrats and liberals alike. Nancy Pelosi says that Putin has something over Trump. Chuck Schumer states that Trump is being blackmailed by Putin. They've all got something to say. I don't care what side of this you're on, but I think it's good that the two nuclear superpowers in the world are at least playing nice with each other. I still to this day don't care about the Russians being interested in our election. It would be a different story if they were able to insert votes for one candidate or another into the system, but they can't. The United States has spent billions of dollars on the Mueller investigation and all of this garbage and BS protecting ourselves from the left.
When we're home it's ok to be a Democrat or a Republican. It's terrible that there is such a divide amongst the parties these days. But once we go beyond our borders and leave US soil ,we are all Americans and we unite as Americans. The Democrats are making us a laughing stock worldwide by showing just how much chaos they've created here. President Obama never had enough balls to meet with Putin or North Korea, but President Trump  has already done more than he did in all 8 years in office. The
Peter Strzok and Lisa Page hearings are another whole topic that my head is spinning over right now. Also, after watching 60 Minutes last night , I'm also still going crazy over the whole Confederate statue removal project.

The end of the world is coming

President Trump's Supreme Court nomination of Brett Kavanaugh is what I feel one of the best selections made in a long time. If you listen to the Democrats, CNN and MSNBC you would think that the world was coming to an end. Life will cease to exist. It wouldn't have mattered if president Trump nominated Jesus Christ, it would not have been good enough. I can't wait to hear the next edition of the Chuck and Nancy show. 

Expect anything less ??

Wallethub has listed the 150 best and worst run cities in the United States .  No surprise that Hartford, New Haven and Bridgeport are all down the bottom of the list. They are all in Connecticut which is run by the worst governor in the country. And yes, all 3 cities and the state are run by Democrats.  If you're wondering who was #150,. It is Washington DC, also run by a Democrat.

So what do you do when a 16 year old dumbass jumps over a tall park perimeter fence and then jumps over another fence around a pool and drowns. And by the way it's after midnight and the park is closed and secured.  Well that fools name is Jaevon Whyte and it happy at Keney Park in Hartford's north end.  So, of course, the punchline is the community activists that are screaming for ways to protect the children. Hey, Assholes,. How about watching your kids and not letting them run the streets all night.

Sen. Chris Murphy still a jerk

Chris Murphy is doing a 70 mile 'walk across Connecticut'.  The news shows him walking all alone down a country road with what looks to be an empty backpack. That's a photo op, don't be fooled. He has support vehicles and an entourage with him. He said he's making stops along the way to talk with people about what's important to them, again, don't be fooled, he's talking about what's important to him.  He's spreading the Democratic word. He's talking about gun control, abolishing ICE, immigration and bad mouthing our president. Thank God he's up for re-election in November. See ya Chris.  Go be a high school teacher or something.

The left has gone insane

Well the left has finally gone crazy. I'm listening to commentaries of things that have happened over the last day or so where a columnist for the Washington Post encourages people to do what they did to Sarah Sanders and Pam Bondi when they were out with their families. They say that Sarah Sanders shouldn't get a pass, that she should have a life sentence of people just abusing her. I don't know what it's going to take before they come to their senses. They are insulting the families of and the people of the Republican party that are serving. They need to knock it off. We all know that the die-hard Republicans are the believers of the 2nd amendment and they are also strong in their convictions. Somebody's going to get hurt. If the Republicans decide to do to the Democrats what they are doing ,there's going to be war in the streets. And the Democrats will lose.

And The Winner Is ---

Maxine Waters has taken over the top spot on the " List of major assholes" . She has replaced Barack Obama who has now dropped into the #2 spot.

Susan Collins

The Republican party should not fund nor endorse Susan Collins in Maine.  She is basically a liberal Democrat.

Too much

There is just too much material for me to write about. The Democrats just provide so much garbage that I don't know where to start. First of all 35 people were arrested by the Hartford Connecticut Police Department for obstructing the front of the Federal Building in a protest to get rid of ICE. Now this is a new bandwagon the Democrats have jumped on. Ever since the no name ,28 year old bartender from New York State defeated the 10 term incumbent for Congress and called for the elimination of ICE, the left has decided to make that a new mission.

In California , San Francisco's minimum wage went up to $15 an hour. So business is there are getting rid of employees because they can't afford to pay them that wage.

In Delaware, they want to start taxing people by how many miles they drive as opposed to how much gasoline they burn. They say they are losing money because people are buying electric vehicles and getting better gas mileage in cars. Now this may sound like a good idea but, I-95 in Delaware is about 11 miles long and you pay $8 to travel it. There is a $4 toll for the state of Delaware and a $4 toll for the Delaware Memorial Bridge. That is also one of the states that uses I-95 as a cash cow ATM machine. You will rarely drive through that 11 miles without seeing 6 or 7 Delaware state troopers. I drove through there last week and there was so much congestion of traffic because of construction going on after the toll booths but they do nothing to alleviate that problem, instead they had people pulled over so they can issue tickets.

In Seattle, they have banned the use of plastic straws or plastic knives, forks or spoons. The environmentalists want you to use bamboo or paper straws and I guess either eat with your hands or they have to give away metal silverware.

And then of course, there's going to be the battle with the Supreme Court Justice selection. Our president has not even chosen a nominee yet and everybody is going crazy on how they're going to defeat this person and not approve the person.

The West Wing.

Yesterday my television signal died. The people at DirecTV told me that it's a dish alignment issue and the earliest they can get somebody here to take care of it is between 12 and 4 on Tuesday July 3rd. This obviously leaves me in a bit of a jam. Since I get bored very easily , I realized that my TV was still hooked up to the Internet so I can watch Netflix for 5 days. I started binge-watching the West Wing series with Martin Sheen. This show is extremely well done, good scripting and just an excellent show. There is one big problem though, the Bartlett Administration is democratic. So as I watch the show that has been out for over 20 years, nothing in that party has changed. They make reference to how much they can give away and social programs and why conservative programs are just no good for the country. They reacted to situations the same way they do now. In watching this and realizing they haven't changed, I've come to the conclusion that the Republicans should win big in November.
